This cut was created by personal chef, Montmireil, for Franois-Ren de Chateaubriand, author come diplomat who served Napoleon as an ambassador and Louis XVIII as Secretary of State for two years.
When prepared properly, dry aged on the bone, it can be the most flavourful and tender cuts. All our beef is from carefully selected Cheshire farmers and hung on the bone for over 28 days.
